Using approximately 1/2 tablespoon of butter per slice of bread, butter one side of each slice of bread and set aside.
Heat a medium to large pan over medium heat. Add one slice of bread (butter side down). Layer on cheddar cheese, brisket, colby jack cheese and top with another slice of bread (butter side up). Once the bottom piece of bread is browning, flip over and brown the other side.
Repeat with remaining sandwiches (or if using a larger pan you can make more than one sandwich at a time).

We love the simplicity of this recipe but also love adding sauteed mushrooms and onions - so feel free to get creative and add ingredients you enjoy!Using finely shredded cheese helps the cheese melt faster - or cover the pan for a little between to keep the heat in. Loading up a grilled cheese can make the bread brown faster than the cheese can melt!Be sure to add cheeses in layers closest to the bread to help the bread stick to the sandwich!
