Ben enjoys days when he can experiment with smoking and grilling on his Big Green Egg. His latest obsession is perfecting brisket and he’s getting pretty dang good at it! One great way to use the leftovers that’s kid friendly (our kids are picky eaters!) is this recipe for Brisket Grilled Cheese. We hope you love how fast & easy it is!

{Leftover} Brisket Grilled Cheese
Looking for a delicious and family-pleasing way to use leftover brisket? Try this easy Brisket Grilled Cheese recipe!
Ingredients
- 8 slices sourdough bread (or another sturdy bread)
- 4 tbsp butter softened
- 1 cup cheddar cheese shredded
- 1 cup colby jack cheese shredded
- 2-3 slices leftover brisket shredded
Instructions
- Using approximately 1/2 tablespoon of butter per slice of bread, butter one side of each slice of bread and set aside.
- Heat a medium to large pan over medium heat. Add one slice of bread (butter side down). Layer on cheddar cheese, brisket, colby jack cheese and top with another slice of bread (butter side up). Once the bottom piece of bread is browning, flip over and brown the other side.
- Repeat with remaining sandwiches (or if using a larger pan you can make more than one sandwich at a time).
Notes
We love the simplicity of this recipe but also love adding sauteed mushrooms and onions - so feel free to get creative and add ingredients you enjoy!
Using finely shredded cheese helps the cheese melt faster - or cover the pan for a little between to keep the heat in. Loading up a grilled cheese can make the bread brown faster than the cheese can melt!
Be sure to add cheeses in layers closest to the bread to help the bread stick to the sandwich!
